Chicken Puff Pie




I like chicken pot pie and I like puff pastry, so I decided to combine them into one dish, a chicken pie! This isn't going to be a super precise recipe, but more like a list of things that I put into my chicken pie. 

Here is a rough estimate of how much of the ingredients I used:
  • 1 sheet PUFF PASTRY
  • 1 large CHICKEN BREAST, shredded
  • 1/2 medium ONION, diced
  • 8 oz. WHOLE KERNAL CORN
  • 8 oz. frozen PEAS & CARROTS mixture
  • 1 small POTATO, diced
  • 1/2 cup GRAVY

For 2 chicken pies, thaw one sheet of puff pastry and cut it into 4 equal sized squares. Preheat your oven to 400 degrees F. In a bowl mix together the chicken, onion, corn, peas, carrots, and potatoes. Feel free to leave out ingredients, add ingredients, or use different proportions based on what you like. I then added some gravy to bind all of the ingredients together.


Then lay 2 of the puff pastry squares on a greased cookie sheet. Scoop somewhere between 1/3 & 1/2 cup of the filling onto each pastry and then lay the other 2 pastry squares on top. Roll and pinch the top and bottom layers together to keep all of the filling in and then bake them for 15-20 minutes! (You will probably have some filling left over to cook up for lunch or dinner tomorrow)


They should look something like this when they come out!



I have also made mini chicken pies in a muffin pan as seen in the picture below!

Ingredients:

      Apple Tart


      Puff pastry is an amazing thing. It is so easy to work with and can take a desserts to the next level! On of my favorite things to do with puff pastry is to make an apple tart.

      All you need is:
      • 1 sheet PUFF PASTRY
      • 1-2 APPLES, sliced thin
      • SUGAR and/or BROWN SUGAR
      • CINNAMON
      • BUTTER
      This is so easy to make your own. You can make a big tart to share with friends or several small tarts that are perfect for one person!

      All you need to do is lay out the pastry on a cookie sheet, layer apples on top, sprinkle with sugar/brown sugar/cinnamon, put several small chunks of butter spaced out on top of the apples, and then wrap the edges of the dough up around the apples. Bake at 400 degrees F for 15 to 20 minutes!

      You could easily substitute pie crust for the puff pastry... I just like puff pastry more!

      Apple Tart

      • 1 sheet PUFF PASTRY (You could substitute pie crust for the puff pastry.)
      • 1-2 APPLES, sliced thin
      • SUGAR and/or BROWN SUGAR

          Directions:
          1. Lay out the pastry on a cookie sheet, layer apples on top, sprinkle with sugar/brown sugar/cinnamon, put several small chunks of butter spaced out on top of the apples.
          2. Wrap the edges of the dough up around the apples. 
          3. Bake at 400 degrees F for 15 to 20 minutes!

          Baked Raspberry Brie Bites


          These little treats are great for a party! They are sweet from the raspberries, savory from the brie, and fluffy from the puff pastry! 

          To make these wonderful little treats you will need:
          • 2 sheets PUFF PASTRY, thawed
          • 1/2 cup RASPBERRY PRESERVES
          • 32 FROZEN RASPBERRIES
          • wedge of BRIE CHEESE, cut into 32 bite-sized squares

          Start by preheating the oven to 400 degrees F. Roll out the puff pastry on a lightly floured surface to get the dough to be about 1/8 inch thick. Then, slice the each pastry sheet into 16 equal sized squares.

          Place a dollop of preserves, a raspberry, and a piece of cheese into the center of each square. Wet your fingers with water and run then along all four edges of the pastry. Then, gather the corners in the center and pinch the sides of the dough together to create a seal. 

          Place the bundles on a baking sheet making sure to space them about 1/2 inch apart. Bake the bundles for about 15-18 minutes, or until the puff pastry is golden brown. Once cooked, take them out of the oven, let them cool for a few minutes, and serve! They are best eaten warm so that the cheese is still a little bit gooey!
