I love soups and this one is easy and delicious! It has a creamy tomato base with tender cheesy tortellini. To make it all you need is:
- 2 cloves GARLIC
- 2 Tbs OLIVE OIL
- 2 (10 & 3/4 oz.) cans CONDENSED TOMATO SOUP
- Optional: 1/4 cup SUN DRIED TOMATOES, chopped
- 2 cups HALF & HALF
- 2 cups CHICKEN STOCK
- 1 tsp ONION POWDER
- 1/2 Tbs ITALIAN SEASONING
- 1/2 tsp SALT
- 1/2 tsp PEPPER
- 1 (9 oz.) package CHEESE FILLED TORTELLINI
- SHREDDED PARMESAN CHEESE, garnish
Start by sauteing the garlic in the olive oil in a large pot. Then add the condensed tomato soup, optional sun dried tomatoes, half & half, chicken stock, onion powder, Italian seasoning, salt, and pepper.
Once all of the ingredients are well mixed, bring the contents of the pot to a simmer and then add the tortellini. Cook the tortellini in the soup for the time directed on the packaging (if it doesn't specify 7-9 minutes should do it!).
After the tortellini has cooked through, serve and top with Parmesan cheese!
Creamy Tomato Tortellini Soup
